Create and Edit options for customers are restricted based on configuration.

After creating a new Sales Order, when attempting to add a new customer, the customer field does not allow Search, Create, or Edit options.

Define specific models to restrict creating options for.

Allowed Users, Allowed Groups, and Allowed Models act as override rules.

If any user, group, or model is selected in these options (for example, user Mitchel Admin, group Sales Administrator, or models like Sales or Purchase), then the restrictions will not be applied to those selected users, groups, or models.

You can see that the Create and Edit options are still available in the Sales Order.
