Por qué elegir este módulo
Funcionalidades: ingredientes con su precio de compra por unidad, el factor de merma (limpieza/desperdicio) y el coste neto resultante por unidad utilizable. Escandallos (recetas) compuestos por líneas de ingrediente con cantidad bruta, merma y coste neto, calculando el coste total, el coste por ración y el coste por 100 g. Sub-recetas: un escandallo puede usar otro escandallo como ingrediente (salsas, fondos, masas base). Precio de venta (PVP) sin y con IVA (10 % hostelería), food-cost teórico (%), margen bruto y multiplicador. Ingeniería de menú (matriz BCG: estrellas, vacas, puzzles y perros) según popularidad y margen. Ficha de alérgenos por escandallo a partir de los 14 alérgenos de declaración obligatoria (Reglamento UE 1169/2011). Comparación del food-cost teórico frente al real y exportación de la ficha.
