Recipes (recetas / escandallos) with ingredient lines, baker's percentages, yield per hornada and automatic ingredient cost per unit. Masa madre / fermentation tracking on the daily production order, with a draft -> fermenting -> baking -> produced -> distributed flow that consumes ingredient stock from the recipe when produced. Route distribution (rutas de reparto) to points of sale, with per-POS delivered/returned/sold quantities and automatic return-rate computation. Returns control (control de devoluciones) with merma/waste cost per product. Allergen labels generated from the 14 EU declarable allergens (Reglamento UE 1169/2011, Anexo II) propagated from ingredients to recipes. CSV worksheet exports (production sheet, allergen labels, waste summary).
