You can view the product quantity before reservation on the buttons (Odoo Standard Buttons).
Sales Quotation / Sales Order Form (Odoo Standard)
Create Stock Reservation Button: Clicking the 'Create Stock Reservation' button will open a popup to select the product(s) to reserve.
Apply Stock Reservation Checkbox: If the 'Apply Stock Reservation' checkbox is ticked, the product reservation will be applied.
Stock Reservation Wizard
Email Notification Selection: The email notification will send an email to the selected users.
Sale Order Line Tab: In the Sale Order Line, add the product(s) to be reserved.
Show Reserved Stock Smart Button on the Sales Order Form (Odoo Standard) | Reserved Stock Smart Button on Sales Order Form
Reserved Stock Button: You can view all reserved stock from the sales orders by clicking this button.
Created Stock Reservation Record
You can view all created reservation records in the list view, as shown.

You can view the updated product quantities after reservations from sales orders.

Quantities are released back into stock after the reservation is released.
Delivery Order (Odoo Standard) After Stock Release
At the time of delivery, quantities will be available for that sales order.

Stock Location - 'Is a Return Location' Boolean Field Configuration
If you're using 'Send goods in output and then deliver (2 steps)' or 'Pack goods, send goods in output, and then deliver (3 steps)' for 'Outgoing Shipments' in the Warehouse configuration (Odoo Standard), you can also select your desired source location by checking the 'Change Source Location for Reservation Move?' box in the wizard and choosing the source location.
