Yes, I am talking about enterprise version. I read in the FAQ that the app works with Enterprise and Community.

Yes it's compatible with enterprise but we don't not use enterprise helpdek module. it's totally separate standalone module.

In the basic behavior of Odoo, there is not template for the mail when you answer to a ticket.

Does this app add a template for this situation ? And so, does this module allow us to chose a custom email sender and reply-to ?

In odoo community there is not helpdesk module. you must talking about enterprise version?

Yes. It's create ticket auto when email received to your support alias.
